Girl Vs. Grill: Pink Pineapple Punch

Today on the blog we are thrilled to bring you a fun, lighthearted series in preparation for summer! It’s starting to warm up, the days are longer, the kids are taking swim lessons and we’re gearing up for … summer barbecue season! We don’t know about you all, but our team loves nothing more than relaxing with family and friends during these slower New Orleans days. We are thrilled to partner with Langenstein’s and Touro Infirmary as sponsors to bring you “Girl Vs. Grill,” a collection of online summer recipes that will culminate with two in person events in May. We hope you will take inspiration from these recipes, register for the dietitian led shopping tours on May 14 and join us for an interactive learning (and shopping) experience. As always, there will be swag … this time it will just be centered around creating the perfect summer grilling party!

Girl Vs. Grill: Pink Pineapple Punch

After this winter, I think everyone is ready to welcome summer. Even in South Louisiana, we had a snow day. A Sneaux day, rather. It’s time for longer days, flip flops, backyard barbecues and all things summer. I love being able to have dinner cooked on the grill while the kids run around outside (though, you know, not too close to the grill), and I love sitting on the back porch sipping a sweet, summer-y drink, since I’m not the one doing the grilling. I usually experiment with different drinks and come up with my own “signature drink” each summer. My newest creation is Pink Pineapple Punch. Or, Sparkling Pineapple Pink Lemonade. I’m not sure yet what to call it. What I am sure of is that it is delicious and refreshing.

What you’ll need to make four 8oz glasses:

DSC_0086

  • Countrytime (or your favorite) powdered Pink Lemonade
  • 2 cups Pineapple Juice
  • 2 cups Ginger Ale
  • 1/4 cup grenadine (I used cherry juice)
  • Ice

Directions:

Fill a large pitcher with ice and pour in pineapple juice and grenadine. Fill the pink lemonade mix to the 1qt line (about 1/3 cup), add to the pineapple juice and stir until dissolved. Add the ginger ale and mix gently. Garnish the pitcher with sliced lemons, pineapples and/or cherries. Pour yourself a glass, sit back and enjoy either cooking or watching your husband cook.

Optional: Add 2-4oz of your favorite rum to make it an adults only drink!

What’s your favorite backyard summer cocktail (or mocktail)? Come shop with us in a few weeks at Langenstein’s (with a 10% discount) and receive personal tips from Touro Infirmary’s very own dietitian, Julie Fortenberry. She’s a mom and understands how hard it is to put healthy food on the table! Plus, you’ll leave with a bag full of grilling goodies!
